Recipes: Fries! Well Not Really But What Do They Know?!?!
If you're anything like me, mealtime with a toddler can be the absolute pits. Requests for mealtime in our house range from cheeseburger.. to well cheeseburger, so sneaking in those much needed fruits and veggies is a task that takes more than the average superhero cape.
Insert Squash fries.
Now if your'e brave enough to make your own well then amen sista, but for me and my busy schedule pre-cut packaged works best. I picked up a bag at our local grocer really thinking "WTF am I going to do with these?" In all reality I as I added them to my cart I envisioned myself some kind of domestic goddess, apron and all whipping up this delicious healthy meal for my family.
What you will need (per my recipe feel free to improvise)
1 Can coconut cooking spray
1/2 tablespoon (who measures anyway) dry parsley
1/2 tablespoon dried garlic
1 tablespoon Trader Joe's garlic olive oil
1 bag zig zag cut squash
salt and pepper
fresh or jarred garlic ( can you tell i like garlic)
First- Pre-wash if not done already, but make sure to dry them fully!
Place in bowl!
Mix together your olive oil, salt & pepper, dried parsley and garlic
Toss olive oil mixture over your squash
Place on Baking Sheet (coated with coconut oil spray)
Broil on 450 degrees flipping every 3-5 minutes to ensure they are crispy but not burnt. If you want to bake you can also do that at 450 for about 20-30 minutes and broil for just the last few minutes to get them nice and crispy
And VOILA your kids get "fries" and in this case I got an awesome topping to a already delicious salad!
