Artichoke: Its Whats For Dinner

With the overwhelming amount of hours spent launching ouR new site it has been some time since i focused on sharing delicious recipes with you!

Don't fret I still documented them and will be posting in the near future. If your'e like me you look at those jarred artichokes at the market and think "what can i do with those besides putting them atop salads". Dont get me wrong I love some fresh artichoke on my salad or rolling them into baked pinwheels (I will share that recipe another day) but ive always thought there has to be another way to eat this delicious veggie. I recently read an article which stated "The total antioxidant capacity of artichoke flower heads is one of the highest reported for vegetables" this had me intrigued.

Wednesday night I found myself perusing the aisles of our local Trader Joe's looking for a quick fix for dinner and BAM I found myself staring at the jarred artichokes and got to thinking again. (Sometimes this is a good thing- but dont tell my husband)

I loaded them into the cart and headed for the checkout. On my way home I thought again I would just add them to a salad for dinner. But VOILA in came the idea to make an artichoke Gratin. See my delicious take on Artichoke Gratin Below!

What you will need

1 jar artichokes (we opted for the marinated ones from Trader Joes)

1/3 cup fresh white cheddar cheese grated (or your favorite cheese gruyere would be delish too and I plan to save that for next time)

1/2 cup bread crumbs

tablespoon garlic powder, salt and pepper to taste

shallow baking dish

1.start by removing artichokes from the jar and lining your baking dish with them (noticed I switched dishes after realizing my original choice was not large enough- made for a good picture though!

2. top artichokes with grated cheese

3. top with breadcrumbs

4. sprinkle garlic powder, salt and pepper

5. insert into oven at 400 degrees F until cheese is melted

6. broil on high to make top crunchy for 3-5 minutes (keep an eye on it so it does not burn


Since this was my first time giving this recipe a shot, and I must say it was delicious! I would definitely mix some things up next time, artichokes jarred like this have a little bit of a bitter taste to them, I would next time switch things up by saute' them in a little bit of coconut oil before placing into the baking dish to change the bitter taste to a slightly sweet but also a more crispy texture.

Needless to say this easy recipe took less than 10 minutes to prep and 15-20 minutes to cook. Our toddler loved it too!
